Let both cool for a moment, then fold each one in half. WHAT TO EXPECT -------------- - The properly cooked tortilla should fold cleanly, with no cracking at the fold line. - The overcooked tortilla is likely to crack or break at the fold, feeling noticeably stiffer and drier when handled. - The overcooked tortilla may also look visibly darker or more dried out across its whole surface, not just at the edges. WHY THIS WORKS AS AN ANSWER ---------------------------- This exercise makes the chapter's own real doneness warning something directly tested rather than just described — a genuine, practical way to recognise overcooked tortillas by feel and by the fold test, not just by appearance.
