Press a second ball deliberately off-centre or with uneven pressure, so it ends up noticeably thicker on one side and thinner on the other. 3. Cook both on the comal using the same three-flip technique. 4. Compare how each one cooks, colours, and whether either one puffs. WHAT TO EXPECT -------------- - The evenly pressed tortilla should cook and colour consistently across its whole surface, and is more likely to show a real, even puff. - The unevenly pressed tortilla is likely to cook unevenly — the thinner side browning or drying faster than the thicker side — and any puff is likely to be lopsided or absent altogether. - The unevenly pressed tortilla may also be more prone to tearing or cracking, especially at the thinnest point.
