KITCHEN PRACTICE 1 — Jalapeño vs. Serrano ================================================== Chapter: Mexican Cookery 1 — Foundations & the Mexican Pantry TASK ---- Taste a fresh jalapeño and a fresh serrano side by side, a small slice of each, and compare the real difference in heat. WHAT TO DO ---------- 1. Cut a small, thin slice from a fresh jalapeño and a fresh serrano. 2. Taste the jalapeño slice first, on its own. 3. Taste the serrano slice next. 4. Note the real difference in heat level and how quickly each one builds. WHAT TO EXPECT -------------- - The jalapeño should taste noticeably milder, with a real but manageable heat. - The serrano should taste distinctly hotter, with the heat building faster and lingering longer. - Both should still carry a real, fresh, grassy chile flavour underneath the heat, not just spiciness on its own. WHY THIS WORKS AS AN ANSWER ---------------------------- This exercise establishes a real, tasted reference point for two of the most commonly used fresh chiles in this course, before either of them is ever cooked into anything — useful groundwork for judging heat level correctly in later recipes.
