KITCHEN PRACTICE 1 — A Full Halászlé ================================================== Chapter: Hungarian Cookery 9 — Fisherman's Soup & Cold Fruit Soup TASK ---- Build a full halászlé — a paprika-forward fish stock, with fish added and gently poached only near the end for a short, real window rather than a long braise. WHAT TO DO ---------- 1. Build an onion base as in Chapter 2, cooked soft and pale. 2. Take the pot off the heat, stir in a generous amount of paprika, and add liquid within seconds, as in Chapter 3 — use more paprika than you would for a pörkölt, since this soup wants to taste intensely of it. 3. Add water or fish stock (and fish bones or a fish head, if you have them) and simmer the base for a while to build real depth. 4. Once the stock is fully built and simmering, add pieces of fish and poach them gently for only a few minutes, until just cooked through. 5. Remove from the heat as soon as the fish is done, and serve. WHAT TO EXPECT -------------- - The finished soup should look a deep, saturated red — noticeably more intense than a pörkölt. - The fish should be tender and moist, holding its shape rather than falling apart into flakes or shreds. - The overall flavour should taste distinctly of paprika first, with the fish's own flavour coming through underneath it. WHY THIS WORKS AS AN ANSWER ---------------------------- This exercise runs halászlé's own full technique end to end for the first time, and is the direct, hands-on demonstration of why this course's own fish chapter needs a genuinely different cooking rhythm from the long-braised meat dishes in Chapters 4 through 6.
