WHAT TO DO ---------- 1. Combine bread flour, water, a little oil or vinegar, and salt, and knead vigorously for a real amount of time until the dough is smooth and elastic. 2. Coat the dough lightly in oil, cover it, and rest it at room temperature for at least 30-60 minutes. 3. Lay a large, floured cloth over a table, and place the rested dough in the centre. 4. Using the backs of your hands and knuckles, gently stretch the dough outward from the centre, working around the edges repeatedly, until it's as thin as you can manage. WHAT TO EXPECT -------------- - The dough should stretch noticeably more easily than you might expect once properly rested, giving way gradually rather than fighting back. - The edges will likely end up thicker than the centre — trimming them off before filling is normal and expected. - A well-stretched portion should be thin enough to see some real light through, even if it doesn't reach true newsprint-thin transparency on a first attempt.
