KITCHEN PRACTICE 1 — A Full Gulyás From Scratch ================================================== Chapter: Hungarian Cookery 6 — Gulyás: The Real Goulash Is a Soup TASK ---- Build a full gulyás from scratch — onion base, off-heat paprika, meat, generous liquid, and potatoes and carrots added at the right point — simmered to a genuine, spoonable soup consistency. WHAT TO DO ---------- 1. Build an onion base as in Chapter 2, cooked soft and pale in lard. 2. Take the pot off the heat, stir in paprika thoroughly, and add a little liquid within seconds, as in Chapter 3. 3. Stir in cubed meat directly, and add a real, generous amount of water or stock — noticeably more than a pörkölt would use. 4. Simmer for a while until the meat has had real time to start cooking, then add diced potatoes and carrots. 5. Continue simmering until the meat and vegetables are all tender, keeping the soup at a genuine, spoonable consistency throughout — don't let it reduce down thick. WHAT TO EXPECT -------------- - The finished gulyás should be genuinely thin enough to eat easily with a spoon, closer to a soup than a stew. - The potatoes and carrots should be tender but still holding their own shape, not falling apart into mush. - The colour should still be a warm, paprika-red, but the overall dish should look noticeably more liquid than either a pörkölt or a paprikás. WHY THIS WORKS AS AN ANSWER ---------------------------- This exercise runs gulyás's own full technique end to end for the first time, giving a direct, tasted answer to the chapter's own central claim — that real gulyás is a genuine soup, not the thick stew the word often gets used for outside Hungary.
